Ingredients:

Serves 4

For the pork:

• 2 pork tenderloins (about 500 g total)

• 8 slices of smoked bacon

• 2 tablespoons olive oil

• 2 garlic cloves, finely chopped

• 1 teaspoon dried rosemary

• Salt and black pepper, to taste

• 1 tablespoon honey (optional, for glazing)

• 1 tablespoon balsamic vinegar (optional, for added flavor)

For the rustic sweet potato mash:

• 600 g sweet potatoes

• 2 medium regular potatoes

• 2 tablespoons extra virgin olive oil

• 1 teaspoon paprika

• A pinch of nutmeg

• Salt and black pepper, to taste

• Extra rosemary for garnish

Instructions:

1. Prepare the pork:

• Preheat your oven to 200 °C (392 °F).

• Cut the tenderloin into pieces about 5 cm (2 inches) wide.

• Season with salt, pepper, chopped garlic, and rosemary.

• Wrap each piece with a slice of bacon and secure with a toothpick if needed.

• In a skillet, heat olive oil and sear the wrapped pork on all sides until the bacon starts to brown.

• Transfer to a baking dish and roast for 10–15 minutes. In the last 5 minutes, brush with honey and/or drizzle with balsamic vinegar for added depth.

2. Make the mash:

• Peel and cut the sweet potatoes and regular potatoes into medium chunks.

• Boil in salted water for 15–20 minutes, until soft.

• Drain and mash with olive oil, paprika, nutmeg, salt, and pepper.

• Use a fork to keep the texture rustic and slightly chunky.

• Sprinkle with dried rosemary before serving.

3. Serve:

• Serve two pork medallions per person with a generous spoonful of the mash.

• Drizzle with pan juices or a quick sauce made from the baking dish.
