Serves 4
For the pork:
• 2 pork tenderloins (about 500 g total)
• 8 slices of smoked bacon
• 2 tablespoons olive oil
• 2 garlic cloves, finely chopped
• 1 teaspoon dried rosemary
• Salt and black pepper, to taste
• 1 tablespoon honey (optional, for glazing)
• 1 tablespoon balsamic vinegar (optional, for added flavor)
For the rustic sweet potato mash:
• 600 g sweet potatoes
• 2 medium regular potatoes
• 2 tablespoons extra virgin olive oil
• 1 teaspoon paprika
• A pinch of nutmeg
• Salt and black pepper, to taste
• Extra rosemary for garnish
Instructions:
1. Prepare the pork:
• Preheat your oven to 200 °C (392 °F).
• Cut the tenderloin into pieces about 5 cm (2 inches) wide.
• Season with salt, pepper, chopped garlic, and rosemary.
• Wrap each piece with a slice of bacon and secure with a toothpick if needed.
