Homemade Breaded Chicken with Rice and Garlic Broccoli

Ingredients (serves 4):

For the breaded chicken:

• 4 chicken breasts

• 2 eggs

• 100 g breadcrumbs

• 50 g all-purpose flour

• Salt and black pepper to taste

• Olive oil for frying

For the rice and broccoli:

• 200 g wild rice (or a wild and long grain mix)

• 1 medium broccoli (about 300 g), cut into small florets

• 1 tablespoon olive oil

• 1 garlic clove, minced

• Salt and black pepper to taste

• Fresh parsley, chopped

Instructions:

1. Cook the rice: Boil the rice in salted water according to package instructions. Drain and set aside.

2. Sauté the broccoli: In a skillet, heat 1 tablespoon of olive oil. Add the garlic and broccoli, and sauté over medium-high heat for about 5–6 minutes, until tender but still crisp. Season with salt and pepper.

3. Prepare the breaded chicken:

• Season the chicken breasts with salt and pepper.

• Coat each piece first in flour, then in beaten egg, and finally in breadcrumbs.

• Heat olive oil in a pan over medium heat and fry the chicken for 3–4 minutes on each side, until golden brown and cooked through.

4. Assemble the plate: Serve the rice with broccoli on top and the breaded chicken on the side. Sprinkle with chopped parsley before serving.
