Ingredients:

• 400 g (14 oz) pumpkin, peeled and cubed

• 300 g (10.5 oz) potatoes, peeled and cubed

• 1 medium onion, finely chopped

• 2 garlic cloves, minced

• 1 tbsp fresh ginger, grated

• 1 tbsp curry powder

• 1/2 tsp ground turmeric

• 400 ml (13.5 fl oz) canned coconut milk

• 200 ml (7 fl oz) water

• 2 tbsp olive oil

• Salt and pepper to taste

• 200 g (7 oz) white rice

• 2 scallions, thinly sliced

Instructions:

1. Cook the rice in salted water until soft. Drain and set aside.

2. In a large pot, heat the olive oil and sauté the onion until translucent.

3. Add the garlic and ginger and cook for about 1 minute.

4. Stir in the curry powder and turmeric to release their aroma.

5. Add the cubed pumpkin and potatoes and mix well.

6. Pour in the coconut milk and water. Season with salt and pepper.

7. Simmer over medium heat for about 20 minutes, or until the vegetables are soft.

8. Serve the curry with rice and sprinkle with fresh scallions.
