This creamy tagliatelle with chicken and mushrooms is the perfect weeknight dinner — quick, comforting, and made with simple ingredients.
Ingredients (serves 4):
• 300 g tagliatelle
• 400 g chicken breast
• 250 g fresh mushrooms (white or brown)
• 2 garlic cloves
• 2 tablespoons olive oil
• 1 tablespoon butter
• 1 teaspoon dried herbs (oregano, thyme, basil)
• Salt and freshly ground black pepper, to taste
• Grated cheese (optional – Parmesan or Grana Padano)
Instructions:
1. Cook the tagliatelle in plenty of salted water according to the package instructions. Drain and toss with a little olive oil to prevent sticking.
2. While the pasta is cooking, slice the chicken breast into thin strips. Season with salt and pepper.
3. Heat 1 tablespoon of olive oil in a large skillet. Sear the chicken until golden and cooked through. Remove and set aside.
4. In the same pan, add the remaining olive oil, butter, and minced garlic. Sauté the sliced mushrooms for 5–7 minutes, until soft and lightly browned.
5. Return the chicken to the pan, mix well, and sprinkle in the dried herbs.
6. Add the cooked pasta and gently toss everything together. Add a splash of pasta water if needed to bring the sauce together.
7. Serve hot, topped with grated cheese and an extra pinch of herbs if desired.
