This cozy vegetable curry with rice is easy to make, full of fresh veggies, and simmered in a creamy coconut sauce. A healthy and flavorful dinner idea!

Ingredients (serves 4):

• 1 medium zucchini, sliced into half moons

• 2 medium carrots, thinly sliced

• 1 red bell pepper, diced

• 200 g cauliflower florets (about 2 cups)

• 1 medium onion, chopped

• 2 garlic cloves, minced

• 2 cm piece of fresh ginger, grated (optional)

• 2 tablespoons olive oil

• 1 teaspoon curry powder

• ½ teaspoon turmeric

• 1 teaspoon sweet paprika

• 400 ml canned coconut milk

• 100 ml water or vegetable broth

• Salt and black pepper to taste

• 300 g basmati or wild rice

Instructions:

1. Cook the rice according to the package instructions. Set aside and keep warm.

2. In a large skillet or wok, heat the olive oil over medium heat. Add the onion and cook for 3 minutes until translucent.

3. Add the garlic and grated ginger (if using), and cook for another 1–2 minutes, stirring frequently.

4. Add the curry powder, turmeric, and paprika, and stir to release the aromas.

5. Add the carrots, zucchini, cauliflower, and bell pepper. Stir-fry for 5 minutes.

6. Pour in the coconut milk and water. Stir well and bring to a gentle boil.

7. Lower the heat, cover, and let simmer for 15 minutes, or until the vegetables are tender.

8. Taste and adjust salt and pepper.

9. Serve the curry hot over a bed of rice.
