A new week is starting, and finally, the good weather is here! The sun is out, the days are getting warmer, and all we want are lighter, fresher meals.
Nothing says summer quite like ripe, aromatic tomatoes. This rustic tart is one of those simple recipes that wins you over with both flavor and looks: flaky puff pastry, colorful tomatoes, and a sprinkle of dried herbs that fills the kitchen with a delicious aroma.
It’s perfect for a light lunch, a picnic, or even as a starter for a dinner with friends.
And the best part? It comes together in no time and always impresses.

Ingredients:
Serves 4
• 1 round sheet of puff pastry
• 4 large, ripe tomatoes (use different colors if you can)
• 6–8 cherry tomatoes
• 1 tablespoon Dijon mustard (optional)
• 1 teaspoon dried herbs (oregano, thyme, rosemary)
• Olive oil, to taste
• Salt and freshly ground black pepper
• Baking paper (if not included with the pastry)
Instructions:
1. Preheat the oven to 200 °C (fan).
2. Roll out the puff pastry on baking paper in a tart pan or on a round baking tray. If you like, you can brush the center with Dijon mustard, leaving a 3 cm border around the edge.
3. Wash and slice the large tomatoes into medium-thick rounds. Halve the cherry tomatoes.
4. Arrange the tomato slices on the pastry, slightly overlapping, starting from the center and working outward in concentric circles. Leave the border free.
5. Fold the pastry edges inward over the tomatoes to create a rustic crust.
6. Season with salt, pepper, dried herbs, and a generous drizzle of olive oil.
7. Bake for about 30–35 minutes, or until the pastry is golden and crisp.
8. Serve warm or at room temperature with a green salad or as a starter.
