Today we’re sharing a recipe we really enjoyed cooking.
Sometimes it’s hard to come up with new meal ideas, especially when you’re trying to eat healthy and include a variety of foods in your diet.
Luckily, we have two great helpers. One is the KptnCook app (and occasionally Chefkoch), and the other is TooGoodToGo – a fantastic way to rescue food that’s close to its expiration date.
If we’re lucky, we manage to grab a surprise bag from a nearby organic supermarket here in Frankfurt, Germany.
This week, one of the ingredients we got was turkey breast. As soon as I saw it, I thought of this recipe – we’ve made it several times before and always loved it!

Turkey and Spinach Filo Pie
Serves 6
Ingredients:
- 300g turkey breast
- 1 pack of filo pastry
- 300g potatoes
- 200g fresh spinach
- 150ml milk (we used oat milk)
- 2 eggs
- 2 red onions
- 2 garlic cloves
- Olive oil
- Salt and pepper
- Sweet or hot paprika (depending on your taste)
Instructions
1. Cook the Turkey
Boil the turkey breast in salted water for about 20 minutes.
Once cooked, remove from the pot and shred it with a fork.
2. Prepare the Potatoes
Wash the potatoes well. Peel them if you prefer.
Boil in salted water for 20–25 minutes.
Once cooked, cut into small chunks.
3. Prep the Veggies
Peel and thinly slice the red onions into half-moons.
Peel and finely chop the garlic.
Wash the spinach thoroughly.
4. Start Cooking
In a large frying pan or wok, heat some olive oil.
Add the onions and garlic, and cook until lightly golden (but not burnt).
Add the spinach and let it wilt for 1–2 minutes.
Then, add the cooked potatoes and shredded turkey.
Mix well and let everything cook together for about 5 minutes.
5. Egg and Milk Mix
In a bowl, whisk together the eggs and milk.
Season with salt and pepper to taste.
6. Assemble the Filo Pie
On a baking tray, lay down two sheets of filo pastry and drizzle with a bit of olive oil.
Create layers by alternating strips of filo with the turkey-potato mixture.
You can do this in two or three layers, finishing with filo strips on top and a final drizzle of olive oil.
7. Bake
Bake in a preheated oven for about 15 minutes, or until golden brown.
