- 2 garlic cloves, minced
- 1 medium onion, sliced
- 3 tablespoons olive oil
- 2 tablespoons soy sauce
- 1 teaspoon sweet paprika

- 300 g white rice
- 600 ml water
- 1 tablespoon olive oil
- Salt, to taste
For the fresh salad
- 1 medium cucumber, thinly sliced
- 100 g leafy greens (lamb’s lettuce, romaine, or mixed greens)
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt, to taste
Instructions
1. Cook the rice
Rinse the rice under cold water until the water runs clear. Add it to a pot with 600 ml of water, a pinch of salt, and 1 tablespoon of olive oil. Bring to a boil over medium heat, then reduce to low and cook for about 10–12 minutes, until the water is absorbed and the rice is tender. Keep covered and set aside.
2. Prepare the chicken stir-fry
Heat olive oil in a large skillet or wok. Add the onion and garlic and sauté until fragrant. Add the chicken strips and cook until lightly golden.
