Ingredients (serves 4):
• 400 g tagliatelle (or your favorite pasta)
• 200 g cherry tomatoes
• 4 tablespoons pesto (preferably homemade)
• 3 tablespoons pine nuts
• Extra virgin olive oil, to taste
• Salt and freshly ground black pepper, to taste
Preparation:
1. Cook the pasta in plenty of salted water according to the package instructions, until al dente. Drain, reserving a bit of the cooking water.
2. While the pasta is cooking, slice the cherry tomatoes in half.
3. Toast the pine nuts in a dry pan over medium heat, stirring frequently, until golden brown. Be careful — they burn easily!
4. Mix the pesto with the hot pasta. Add a splash of cooking water to help the sauce coat the pasta evenly if needed.
5. Divide the pasta into bowls, then top with the cherry tomatoes and toasted pine nuts.
6. Finish with a drizzle of olive oil and some freshly ground black pepper.
