Ingredients (Serves 4):

For the chicken:

• 4 chicken breasts (about 150–180 g each)

• 2 tablespoons olive oil

• 2 garlic cloves, finely chopped

• 1 tablespoon lemon juice

• Salt and pepper to taste

For the sweet potato mash:

• 800 g sweet potatoes, peeled and diced

• 1 tablespoon butter or olive oil

• A pinch of nutmeg

• Salt and pepper to taste

For the broccoli:

• 300 g broccoli florets

• Salt to taste

Preparation:

1. Start with the mash: Boil the sweet potatoes in salted water for 15–20 minutes until very tender. Drain and mash until smooth. Add butter or olive oil, nutmeg, salt, and pepper. Mix well and set aside.

2. Cook the chicken: Season the chicken breasts with garlic, lemon juice, salt, and pepper. Heat the olive oil in a non-stick pan over medium-high heat and grill the chicken for 5–7 minutes on each side, until golden and cooked through.

3. Steam the broccoli: While the chicken is cooking, steam the broccoli for about 5–6 minutes until bright green and slightly tender but still crisp.

4. Plate it up: Spoon a portion of sweet potato mash onto each plate, top with steamed broccoli, and finish with the grilled chicken breast. Serve immediately.
