Today I’m sharing a very special post — a recipe written by my parents!

There’s something magical about recipes passed down through generations — they carry stories, memories, and the warmth of home. This traditional tortilla recipe, lovingly made with golden potatoes, sweet onions, and farm-fresh eggs, has been a family favorite for decades. It’s the kind of rustic comfort food that brings people together, whether you’re serving it for a cozy brunch, a casual weeknight dinner, or a picnic in the sun. If you’ve ever wondered how to make a true tortilla de patatas just like in Spain, this step-by-step guide will show you how simple and rewarding it can be.

It’s a creative twist on the classic tortilla, and it completely won us over when we had it for dinner last Saturday. It’s one of those meals packed with flavour and family memories.

Ingredients

Serves 4

• 12 eggs

• 4 small potatoes

• 1 can of sausages (250g)

• Half a chorizo

• 1 large onion

• A generous bunch of fresh parsley

• Olive oil (as needed)

• Salt and pepper (to taste)

Preparation

1. Crack the eggs into a large bowl and beat them well.

2. Finely chop the onion and parsley, then add them to the eggs.

3. Peel the potatoes and slice them into thin rounds.

4. Cut the sausages and chorizo into small pieces.

5. In a frying pan, heat some olive oil and lightly fry the potato slices.

6. Once soft, pour in the egg mixture with the onion, sausages, and chorizo.

7. When the bottom of the tortilla is cooked, use a plate to flip it carefully and let it cook through on the other side.

8. Serve warm — and enjoy every bite!
