Sundays at our house call for simple meals — but always with a special touch. The week is usually busy, full of schedules and commitments, so I like to use Sunday to slow down, cook at a relaxed pace, and try out combinations that bring comfort with a hint of surprise. This beetroot rice recipe is exactly that: a fusion of simplicity and originality.
Beetroot isn’t just beautiful — with that deep ruby color that stains everything it touches — it’s also full of benefits: rich in antioxidants, vitamins, and minerals, it brings a soft, slightly earthy and sweet flavor that turns plain rice into a memorable dish. Plus, it’s a great way to use up leftover cooked beetroot or give new life to a vegetable that often gets forgotten in the back of the fridge.
This rice is light, nutritious, and can be served as a main or as a side dish. It also makes a great base to personalize: just top it with some fresh herbs or toasted nuts and you’ve got yourself a complete and satisfying meal. But honestly, even just like this, it tastes wonderful.

Ingredients:
Serves 4
• 200 g rice
• 2 medium beetroots, diced
• 1 small onion, finely chopped
• 2 garlic cloves, minced
• Olive oil
• Salt and pepper to taste
• Dried or fresh thyme (optional)
• 500ml water or vegetable stock
Preparation:
Sauté: In a medium pot, heat the olive oil and sauté the onion for 2–3 minutes, until it starts to become translucent. Add the garlic and cook for another minute.
Add the beetroot: Stir in the diced beetroot and mix well.
Add the rice: Add the uncooked rice and stir to coat it with the beetroot mixture. Let it toast lightly for about 1 minute.
Cook: Pour in the water or hot vegetable stock, season with salt, pepper, and a bit of thyme. Cover and cook on low heat for 10–12 minutes, or until the liquid is absorbed and the rice is cooked.
Serve: Fluff the rice with a fork before serving. It works beautifully as a light main or as a colorful side dish.

- Roast or steam beets first for deeper flavor and natural sweetness.
- Use short-grain rice for a creamier texture.
- Garnish with toasted nuts (almonds or pine nuts) for crunch.
